- 1/2–1 cup no sugar added pizza sauce (adjust based on preference)

Instructions
- Preheat the oven to 400°F (200°C).
- Slice the eggplant into 1/2-inch rounds.
- Brush both sides of the eggplant slices with olive oil and place them on a baking sheet lined with parchment paper.
- Bake the eggplant slices for 15-20 minutes, or until softened and slightly golden.
- Remove from the oven and top each slice with 1-2 tablespoons of pizza sauce.
- Return to the oven and bake for an additional 10 minutes to heat the sauce and allow the flavors to meld.
