Instructions

  • Prepare aromatic butter: In a small bowl, combine the unsalted butter, finely chopped tender garlic, fresh thyme leaves, and a pinch of salt. Warm this mixture in the microwave for about 30 seconds until melted and fragrant.
  • Brush puff pastry: Unroll the rectangular puff pastry dough onto a clean surface. Using a brush, evenly spread the aromatic melted butter mixture over the entire surface, reserving a little to brush later.
  • Add cheese: Grate the aged cheddar cheese evenly over the buttered pastry, distributing it across the dough.
  • Roll the dough: Starting from the longest side, tightly roll the puff pastry into a big log shape until fully rolled.
  • Slice into pinwheels: Using a sharp knife, carefully slice the rolled dough into 1 cm thick rounds, about the size of a small finger. This should yield approximately 20 pinwheels.
  • Arrange and brush: Place each pinwheel on a baking tray lined with parchment paper, spaced slightly apart. Brush the tops with the remaining aromatic butter mixture.
  • Bake: Preheat the oven to 200°C (400°F). Bake the pinwheels for about 10 minutes or until they puff up and turn golden brown.
