  • 4 boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 3 egg whites, whisked
  • 3 tablespoons cornstarch
  • Oil for frying (vegetable or canola)
  • Orange sauce (made with orange juice, soy sauce, vinegar, sugar, and ginger — recipe below)

Orange Sauce (for the recipe):

  • 1/2 cup fresh orange juice
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon grated ginger
  • 1 teaspoon garlic (optional)
  • 1 teaspoon cornstarch (for thickening)

Instructions

  • In a large bowl, mix the egg whites and cornstarch to create a batter-like consistency.
  • Add the chicken pieces to the bowl and coat them evenly with the mixture.
  • Heat some oil in a large pan over medium-high heat. Once the oil is hot, carefully add the chicken pieces and fry until golden brown and crispy. Remove the chicken and drain on paper towels.
  • In a separate pan, combine the orange juice, soy sauce, rice vinegar, sugar, ginger, and garlic (if using). Stir and bring to a simmer.
  • Mix 1 teaspoon of cornstarch with a little water and add it to the sauce to thicken. Stir until the sauce reaches a desired consistency.
  • Once the sauce is ready, pour it over the cooked chicken and toss to coat evenly.

Notes

  • You can add some vegetables, like bell peppers or broccoli, to the dish for extra flavor and texture.
  • For extra crispiness, double fry the chicken: fry once to cook the chicken, then let it rest for a minute and fry again to achieve a crunchier texture.
