- 3 egg whites, whisked
- 3 tablespoons cornstarch
- Oil for frying (vegetable or canola)
- Orange sauce (made with orange juice, soy sauce, vinegar, sugar, and ginger — recipe below)
Orange Sauce (for the recipe):
- 1/2 cup fresh orange juice
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sugar
- 1 teaspoon grated ginger
- 1 teaspoon garlic (optional)
- 1 teaspoon cornstarch (for thickening)
Instructions
- In a large bowl, mix the egg whites and cornstarch to create a batter-like consistency.
- Add the chicken pieces to the bowl and coat them evenly with the mixture.
- Heat some oil in a large pan over medium-high heat. Once the oil is hot, carefully add the chicken pieces and fry until golden brown and crispy. Remove the chicken and drain on paper towels.
- In a separate pan, combine the orange juice, soy sauce, rice vinegar, sugar, ginger, and garlic (if using). Stir and bring to a simmer.
- Mix 1 teaspoon of cornstarch with a little water and add it to the sauce to thicken. Stir until the sauce reaches a desired consistency.
- Once the sauce is ready, pour it over the cooked chicken and toss to coat evenly.
