Zucchini Patties

  • Author: Mary
  • Total Time: 20 minutes
  • Yield: 6-8 patties (depending on size) 1x

Description

These Zucchini Patties are crispy on the outside, tender on the inside, and packed with flavor. Made with grated zucchini, Parmesan cheese, and a touch of oregano, they are the perfect appetizer, side dish, or snack. Simple to make, these patties are a great way to use up fresh zucchini!

Ingredients

Scale
  • 2 cups grated zucchini, well-drained (approximately 3 medium zucchini)
  • 1 tablespoon finely chopped onion
  • 1/4 cup Parmesan cheese (25 grams)
  • 1/4 cup flour (32 grams)
  • 2 large eggs
  • 2 tablespoons mayonnaise
  • 1/4 teaspoon oregano
  • 1/4 teaspoon salt
  • 12 dashes black pepper
  • 12 tablespoons olive oil (for frying)

Instructions

  • Prepare the Zucchini: Grate the zucchini and place it in a clean kitchen towel or paper towels. Squeeze out as much moisture as possible. This step is crucial to prevent soggy patties.
  • Mix the Ingredients: In a large mixing bowl, combine the grated zucchini, finely chopped onion, Parmesan cheese, flour, eggs, mayonnaise, oregano, salt, and pepper. Stir until everything is well combined.
  • Form the Patties: Using your hands, take spoonfuls of the mixture and form them into small patties (about 2-3 inches in diameter).
  • Cook the Patties: Heat 1-2 tablespoons of olive oil in a large skillet over medium heat. Once the oil is hot, carefully place the patties in the skillet. Cook for 3-4 minutes per side, or until golden brown and crispy. Be gentle when flipping them to avoid breaking.
  • Drain and Serve: Once the patties are cooked, transfer them to a plate lined with paper towels to drain any excess oil. Serve hot and enjoy!

Notes

  • For a gluten-free version, you can substitute the flour with a gluten-free flour blend or almond flour.
  • You can also add herbs like parsley or basil to the patty mixture for extra flavor.
  • These patties are great served with a side of sour cream, tzatziki, or a squeeze of lemon juice.
