Description

Yogurt Lemon Poppy Seed Mousse Cake is a light and refreshing dessert that combines the tanginess of Greek yogurt with the bright flavors of lemon and the delightful crunch of poppy seeds. With a creamy, mousse-like texture and a delicate sweetness from honey, it’s the perfect treat to enjoy after a meal or as a special occasion dessert. Refreshing, light, and absolutely delicious!

Ingredients

Scale
  • 1 cup plain Greek yogurt
  • 1/2 cup lemon juice
  • 1 tablespoon lemon zest
  • 1/4 cup honey
  • 2 tablespoons poppy seeds
  • 1 package gelatin (about 2 1/2 teaspoons)
  • 1/4 cup cold water
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  • Bloom the Gelatin: In a small bowl, sprinkle gelatin over cold water and let it sit for 5 minutes to bloom.
  • Prepare Lemon Mixture: In a saucepan, heat lemon juice, lemon zest, and honey until warm (do not boil).
  • Dissolve Gelatin: Add bloomed gelatin to the warm lemon mixture and stir until completely dissolved. Remove from heat and set aside.
  • Combine Yogurt and Poppy Seeds: In a large bowl, whisk Greek yogurt and poppy seeds together.
  • Add Lemon Mixture: Slowly pour the lemon mixture into the yogurt mixture, stirring constantly to combine.
  • Whip Cream: In a separate bowl, whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  • Fold Cream into Yogurt Mixture: Gently fold the whipped cream into the yogurt mixture until fully combined.
  • Chill the Cake: Pour the mousse mixture into a cake pan (preferably a springform pan for easy removal) and refrigerate for at least 4 hours or until fully set.
  • Serve: Serve chilled and enjoy!

Notes

  • Gelatin Tip: Make sure to bloom the gelatin properly so that it dissolves evenly into the lemon mixture, ensuring the mousse sets correctly.
  • Serving Idea: Garnish with additional lemon zest or fresh berries before serving for extra flavor and color.
  • Storage: Store leftovers in the fridge for up to 3 days.
