- For the crust:
- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- ⅓ cup unsalted butter, melted

- 8 oz cream cheese, softened
- 1 ½ cups white chocolate chips
- 2 cups heavy cream
- 1 cup granulated sugar
- 4 large eggs
- 1 tsp vanilla extract
- Pinch of salt
- For the strawberry topping:
- 2 cups fresh strawberries, sliced
- 2 tbsp granulated sugar
- 1 tbsp lemon juice
- 1 tsp vanilla extract
Instructions
- Prepare the crust: Preheat the oven to 325°F (163°C). In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes and set aside to cool.
- Make the cheesecake filling: In a heatproof bowl, melt the white chocolate chips over a double boiler or in the microwave in 30-second intervals, stirring until smooth. Set aside to cool slightly.
- In a large bowl, beat the cream cheese with an electric mixer until smooth and creamy. Add sugar, vanilla extract, and salt, and mix until combined. Add the eggs one at a time, mixing well after each addition. Stir in the melted white chocolate until fully incorporated.
- Bake the cheesecake: Pour the cheesecake filling into the cooled crust. Tap the pan on the counter to remove air bubbles. Bake in the preheated oven for 45–50 minutes or until the center is almost set. It should still jiggle slightly when shaken. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
- Chill the cheesecake: Once cooled, refrigerate the cheesecake for at least 4 hours or overnight for best results.
- Prepare the strawberry topping: In a bowl, combine the sliced strawberries, sugar, lemon juice, and vanilla extract. Let them macerate for 30 minutes to release their juices.
- Serve: Before serving, top the cheesecake with the strawberry mixture, making sure to spoon some of the sweet strawberry syrup over the top. Slice and enjoy!

- If you prefer a smoother cheesecake, ensure that the cream cheese is softened to room temperature before mixing.
