Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, combine sweet potatoes, maple syrup, olive oil, cinnamon, and salt. Toss until sweet potatoes are evenly coated.
- Spread sweet potatoes in a single layer on a baking sheet.
- Roast in the preheated oven for 30-35 minutes, or until sweet potatoes are tender, stirring halfway through.
- In the last 10 minutes of roasting, sprinkle chopped walnuts over the sweet potatoes and continue to roast.
