  • 1/4 cup maple syrup
  • 2 tablespoons olive oil
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts

Instructions

  • Preheat oven to 400°F (200°C).
  • In a large bowl, combine sweet potatoes, maple syrup, olive oil, cinnamon, and salt. Toss until sweet potatoes are evenly coated.
  • Spread sweet potatoes in a single layer on a baking sheet.
  • Roast in the preheated oven for 30-35 minutes, or until sweet potatoes are tender, stirring halfway through.
  • In the last 10 minutes of roasting, sprinkle chopped walnuts over the sweet potatoes and continue to roast.
