Ingredients
Scale
For the Sugar Cookies
- 1 cup all-purpose flour
- ½ cup granulated sugar
- ¼ cup plant-based butter (softened)
- ½ teaspoon vanilla extract
- ¼ cup plant milk (almond, oat, etc.)
- ½ teaspoon baking powder
- ¼ teaspoon salt
For the Royal Icing
- ½ cup powdered sugar
- 1–2 tablespoons plant milk (adjust for consistency)
- ¼ teaspoon vanilla extract
- Food coloring (optional, for decorating)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the plant-based butter and granulated sugar until smooth and light in texture.
- Add the vanilla extract and plant milk, mixing until fully combined.
- In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Roll the dough out on a lightly floured surface to about ¼ inch thickness. Use cookie cutters to cut out shapes (hearts, circles, etc.) for Valentine’s Day.
- Place the cookie shapes on the prepared baking sheet and bake for 8-10 minutes, or until the edges are lightly golden. Let them cool completely on a wire rack.
- While the cookies cool, prepare the royal icing. In a small bowl, whisk together the powdered sugar, plant milk, and vanilla extract until smooth. Adjust the amount of plant milk to reach your desired icing consistency.
- Divide the royal icing into separate bowls if you want to color it, adding a few drops of food coloring to each bowl and mixing until well blended.
- Once the cookies are completely cooled, use a piping bag or a spoon to decorate the cookies with the royal icing. Let the icing set before serving.
- Serve and enjoy!
Notes
- For a thicker icing, use less plant milk. For a thinner icing that’s easier to spread, add more plant milk.
- These cookies can be stored in an airtight container for up to 3-4 days.
- Feel free to use any food coloring to match the holiday theme or your personal preference.
