For the Sugar Cookies

  • 1 cup all-purpose flour

  • ¼ teaspoon salt

For the Royal Icing

  • ½ cup powdered sugar
  • 12 tablespoons plant milk (adjust for consistency)
  • ¼ teaspoon vanilla extract
  • Food coloring (optional, for decorating)

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together the plant-based butter and granulated sugar until smooth and light in texture.
  • Add the vanilla extract and plant milk, mixing until fully combined.
  • In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  • Roll the dough out on a lightly floured surface to about ¼ inch thickness. Use cookie cutters to cut out shapes (hearts, circles, etc.) for Valentine’s Day.
  • Place the cookie shapes on the prepared baking sheet and bake for 8-10 minutes, or until the edges are lightly golden. Let them cool completely on a wire rack.
  • While the cookies cool, prepare the royal icing. In a small bowl, whisk together the powdered sugar, plant milk, and vanilla extract until smooth. Adjust the amount of plant milk to reach your desired icing consistency.
  • Divide the royal icing into separate bowls if you want to color it, adding a few drops of food coloring to each bowl and mixing until well blended.
  • Once the cookies are completely cooled, use a piping bag or a spoon to decorate the cookies with the royal icing. Let the icing set before serving.

Notes
