- 10 oz cherry tomatoes, halved
- 8 oz mozzarella pearls
- 1 cup chopped spinach
- 1/4 cup chopped basil
- 1/2 cup olive oil
- 2 tablespoons balsamic vinegar
- 3–4 garlic cloves, minced
- 3/4 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- Balsamic glaze (optional)
Instructions
- Cook the cheese tortellini according to the package directions. Once cooked, drain and rinse with cold water to cool the pasta.
- In a large bowl, combine the cooled tortellini, halved cherry tomatoes, mozzarella pearls, chopped spinach, and chopped basil.
- In a separate small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, Italian seasoning, salt, and pepper until well combined.
- Pour the dressing over the tortellini mixture and toss gently to coat all the ingredients evenly.
- Optional: Drizzle balsamic glaze over the salad before serving for an extra burst of flavor and sweetness.
- Serve immediately, or refrigerate for 30 minutes to let the flavors meld together.
Notes
- This salad can be made ahead of time and stored in the refrigerator for up to 2 days. Just be sure to add the balsamic glaze right before serving to maintain its flavor.
