These Three-Cheese Sausage Lasagna Roll-Ups are a fun and flavorful twist on traditional lasagna. Filled with a creamy ricotta, mozzarella, and Parmesan cheese mixture, along with seasoned Italian sausage, these roll-ups are topped with marinara sauce and baked to perfection for a cozy, cheesy meal.

  • 12 lasagna noodles (cooked until al dente)
  • 1 pound Italian sausage (remove the casing for crumbling)
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 large egg
  • 2 cups marinara sauce (homemade or store-bought)
  • 2 tablespoons fresh parsley (chopped, for garnish)
  • 1 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 375°F (190°C).
  • Cook the lasagna noodles according to package directions until al dente, drain, and set aside to cool slightly.
  • In a large skillet, cook the Italian sausage over medium heat, crumbling it as it cooks, until browned and fully cooked. Drain any excess fat and set aside.
  • In a large mixing bowl, combine the ricotta cheese, shredded mozzarella, grated Parmesan, and egg. Add the cooked sausage, dried basil, garlic powder, salt, and pepper. Mix until everything is well combined.
  • Spread a small amount of marinara sauce on the bottom of a 9×13-inch baking dish.
  • Take each cooked lasagna noodle and spread an even layer of the cheese and sausage mixture along the length of the noodle. Roll the noodle up tightly and place it seam-side down in the prepared baking dish.
  • Once all the noodles are rolled and arranged in the dish, pour the remaining marinara sauce over the top of the roll-ups.
  • Cover the dish with aluminum foil and bake for 25 minutes.
  • After 25 minutes, remove the foil and bake for an additional 10-15 minutes, until the top is bubbly and the cheese is melted.
  • Remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving.

Notes

  • For a lighter version, you can swap out the Italian sausage for ground turkey or chicken.
  • For a gluten-free option, use gluten-free lasagna noodles.
  • For a dairy-free version, use vegan cheese substitutes and omit the egg, replacing it with a flaxseed mixture (1 tablespoon flaxseed meal + 3 tablespoons water).
