Scale
For the Cookie
- ½ cup butter (salted or unsalted), softened
- ½ cup granulated sugar
- 2 tablespoons brown sugar
- 1 large egg white
- 1 teaspoon vanilla extract
- 1 & ⅓ cups + 1 tablespoon all-purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon baking powder
- ¼ teaspoon salt
For the Frosting
- ½ cup butter, softened
- 1 cup powdered sugar
- 1 tablespoon cream (heavy cream or milk)
- 1 teaspoon vanilla extract
- Pink gel food coloring
- Valentine’s Day sprinkles (optional, for decoration)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg white and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
- Flatten each ball slightly with the back of a spoon or your fingers.
- Bake for 8-10 minutes or until the edges are lightly golden. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- While the cookies are cooling, make the frosting. In a medium bowl, beat the softened butter until creamy.
- Gradually add the powdered sugar, cream, and vanilla extract, mixing until smooth and fluffy.
- Add a few drops of pink gel food coloring and mix until the frosting reaches your desired color.
- Once the cookies are fully cooled, spread a layer of frosting on each cookie.
- Top with Valentine’s Day sprinkles for a festive touch.
- Serve and enjoy!
