  • 1 large flour tortilla
  • 1/2 cup cooked chicken, shredded
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons diced green chilies
  • 2 tablespoons diced tomatoes
  • 2 tablespoons diced red onion
  • 1/4 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon chili powder
  • Butter (for cooking)

Instructions

  • In a small bowl, mix together the shredded chicken, cumin, garlic powder, and chili powder.
  • Lay the flour tortilla flat on a surface and spread the chicken mixture on one half of the tortilla.
  • Sprinkle the shredded cheddar cheese over the chicken mixture.
  • Add the diced green chilies, tomatoes, and red onion on top of the cheese.
  • Fold the other half of the tortilla over the filling to create a half-moon shape.
  • In a skillet over medium heat, melt a small amount of butter.
  • Place the quesadilla in the skillet and cook for 2-3 minutes on each side, until the tortilla is golden brown and the cheese is melted.
  • Remove the quesadilla from the skillet and let it cool for a minute before slicing it into wedges.
