- 8 oz cream cheese or coconut cream
- 4 oz yogurt or additional cream cheese or coconut cream
- 1 cup powdered sugar or sugar-free alternative
- 5 medium-sized strawberries (optional)
- 1/4 teaspoon vanilla bean paste
Instructions
- In a medium bowl, beat together the cream cheese (or coconut cream) and yogurt (or additional cream cheese/coconut cream) until smooth and well combined.
- Add the powdered sugar (or sugar-free alternative) and vanilla bean paste to the mixture and beat until fully incorporated.
- If you’re using fresh strawberries, puree them in a blender or food processor until smooth. Fold the strawberry puree into the cream mixture. If you prefer a chunkier texture, you can chop the strawberries and fold them in instead.
- Spoon the mousse mixture into individual serving dishes or glasses.
- Refrigerate for at least 2-3 hours, or until set.
- Serve chilled, optionally garnished with extra strawberries or a dollop of whipped cream.
Notes
- If you prefer a vegan option, use coconut cream and dairy-free yogurt, as well as a sugar-free sweetener for a completely plant-based mousse.
- For a more intense strawberry flavor, you can add more strawberries or use strawberry extract for extra sweetness and flavor.
- This mousse can also be made in advance, making it a great dessert for parties or gatherings.
