  • 4 oz yogurt or additional cream cheese or coconut cream
  • 1 cup powdered sugar or sugar-free alternative
  • 5 medium-sized strawberries (optional)
  • 1/4 teaspoon vanilla bean paste

Instructions

  • In a medium bowl, beat together the cream cheese (or coconut cream) and yogurt (or additional cream cheese/coconut cream) until smooth and well combined.
  • Add the powdered sugar (or sugar-free alternative) and vanilla bean paste to the mixture and beat until fully incorporated.
  • If you’re using fresh strawberries, puree them in a blender or food processor until smooth. Fold the strawberry puree into the cream mixture. If you prefer a chunkier texture, you can chop the strawberries and fold them in instead.
  • Spoon the mousse mixture into individual serving dishes or glasses.
  • Refrigerate for at least 2-3 hours, or until set.
  • Serve chilled, optionally garnished with extra strawberries or a dollop of whipped cream.

Notes

  • If you prefer a vegan option, use coconut cream and dairy-free yogurt, as well as a sugar-free sweetener for a completely plant-based mousse.
  • For a more intense strawberry flavor, you can add more strawberries or use strawberry extract for extra sweetness and flavor.
  • This mousse can also be made in advance, making it a great dessert for parties or gatherings.
