  • Author: Mary
  • Total Time: 2 hours 10 minutes (includes refrigeration)
  • Yield: 8 servings 1x

Description

This Strawberry Crunch Banana Pudding combines the creamy, comforting layers of banana pudding with the sweet, tangy freshness of strawberries and a satisfying crunch. Topped with a strawberry crunch topping, it’s the perfect dessert for any occasion—easy to make and a crowd-pleaser!

Ingredients

Scale
  • 1 box vanilla instant pudding mix (3.4 oz)
  • 2 cups cold milk (or almond/oat milk for a dairy-free version)
  • 1 cup whipped cream or whipped topping (use coconut whipped cream for a vegan version)
  • 2 ripe bananas, sliced
  • 1 cup fresh strawberries, sliced
  • 1 cup crushed vanilla wafers or golden Oreos (swap for gluten-free cookies if needed)
  • ½ cup strawberry crunch topping (a mixture of crushed freeze-dried strawberries and cookie crumbs)

Instructions

  • In a large bowl, whisk together the vanilla instant pudding mix and cold milk. Stir for about 2 minutes until the pudding thickens and sets.
  • Gently fold in the whipped cream or whipped topping until well combined, making the pudding light and fluffy.
  • In a serving dish, layer half of the sliced bananas on the bottom, followed by half of the sliced strawberries.
  • Spread half of the pudding mixture over the fruit layer, then top with a layer of crushed vanilla wafers or golden Oreos.
  • Repeat the layers with the remaining bananas, strawberries, pudding mixture, and cookies.
  • Finish with a generous sprinkle of the strawberry crunch topping over the top layer for added texture and flavor.
  • Refrigerate for at least 2 hours to allow the flavors to meld and the pudding to set.
  • Serve chilled and enjoy!

Notes

  • For an extra burst of flavor, you can drizzle some strawberry syrup over the top before serving.
  • If you prefer a richer dessert, you can use full-fat whipped cream instead of whipped topping.
  • This dessert can easily be made ahead of time and stored in the fridge for up to 2 days.
