For the Brownies
- ½ cup melted unsalted butter
- ¾ cup granulated sugar
- 2 large eggs
- 1 tablespoon water
- 2 teaspoons pure vanilla extract
- ½ cup unsweetened cocoa powder

- ¾ cup all-purpose flour (spooned and leveled)
- ½ teaspoon kosher salt
- ¾ cup chocolate chips (milk chocolate preferred)
- ½ cup freeze-dried strawberries
- Generous ¼ cup strawberry jam or preserves
For the Strawberry Frosting
- ½ cup freeze-dried strawberries
- 5 tablespoons unsalted butter (softened)
- 1 ½ cups powdered sugar
- ¼ teaspoon pure vanilla extract
- 1 tablespoon strawberry jam
- 1 tablespoon milk
Instructions
- Make the Brownies:
Preheat your oven to 350°F (175°C) and grease an 8×8-inch square baking pan.
In a large bowl, combine the melted butter and granulated sugar. Mix until smooth.
Add the eggs, one at a time, beating well after each addition. Stir in the water and vanilla extract.
In another bowl, whisk together the cocoa powder, powdered sugar, flour, and kosher salt. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
Fold in the chocolate chips and freeze-dried strawberries, then spread the batter evenly into the prepared baking pan.
Drop spoonfuls of strawberry jam over the brownie batter and swirl gently with a knife for a marbled effect.
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Let the brownies cool completely in the pan. - Make the Strawberry Frosting:
In a food processor, pulse the freeze-dried strawberries until they are finely ground into a powder.
In a mixing bowl, beat the softened butter until creamy. Add the powdered sugar, ground freeze-dried strawberries, vanilla extract, strawberry jam, and milk. Beat until smooth and fluffy. - Assemble:
Once the brownies have cooled, spread the strawberry frosting evenly over the top of the brownies.
Cut into squares and serve!
Notes
- If you prefer a stronger strawberry flavor, add extra freeze-dried strawberries to the frosting.
- For a smoother frosting, make sure to sift the powdered sugar and ground strawberries before mixing.
- These brownies are perfect for gifting or serving at a party. The frosting can also be stored in the fridge for up to a week, so you can make it ahead of time.
