- 2 lbs steak (ribeye, sirloin, or flank steak, cut into strips)
- 2 tablespoons olive oil (for cooking)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and black pepper, to taste
- 1 cup long-grain white rice
- 2 cups chicken broth (or water)
- 1 cup shredded cheddar cheese
- 1/2 cup queso dip (or queso blanco)
- 1 tablespoon fresh lime juice (optional, for garnish)
- Fresh cilantro (optional, for garnish)
Instructions
- Season the steak strips with garlic powder, onion powder, chili powder, cumin, salt, and black pepper.
- In a large skillet, heat olive oil over medium-high heat. Add the seasoned steak strips and cook for 3-5 minutes, or until the steak is browned and cooked to your desired doneness. Remove from the skillet and set aside.
- In the same skillet, add the rice and toast it for 1-2 minutes, stirring occasionally, until lightly golden.
- Add the chicken broth (or water) to the skillet with the rice. Bring to a simmer, then reduce the heat to low, cover, and cook for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
- Once the rice is cooked, stir in the shredded cheddar cheese and queso dip. Stir until the cheese is melted and the rice is creamy.
- Return the cooked steak strips to the skillet, stirring gently to combine with the cheesy rice.
- Garnish with fresh lime juice and cilantro (optional) before serving.
