Steak & Queso Rice is a hearty and flavorful dish that combines tender, juicy steak with creamy, cheesy rice. This dish brings together the rich flavors of perfectly cooked steak, zesty queso, and savory seasonings, creating a satisfying meal that’s perfect for any night of the week.

  • 2 lbs steak (ribeye, sirloin, or flank steak, cut into strips)
  • 2 tablespoons olive oil (for cooking)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and black pepper, to taste
  • 1 cup long-grain white rice
  • 2 cups chicken broth (or water)
  • 1 cup shredded cheddar cheese
  • 1/2 cup queso dip (or queso blanco)
  • 1 tablespoon fresh lime juice (optional, for garnish)
  • Fresh cilantro (optional, for garnish)

Instructions

  • Season the steak strips with garlic powder, onion powder, chili powder, cumin, salt, and black pepper.
  • In a large skillet, heat olive oil over medium-high heat. Add the seasoned steak strips and cook for 3-5 minutes, or until the steak is browned and cooked to your desired doneness. Remove from the skillet and set aside.
  • In the same skillet, add the rice and toast it for 1-2 minutes, stirring occasionally, until lightly golden.
  • Add the chicken broth (or water) to the skillet with the rice. Bring to a simmer, then reduce the heat to low, cover, and cook for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  • Once the rice is cooked, stir in the shredded cheddar cheese and queso dip. Stir until the cheese is melted and the rice is creamy.
  • Return the cooked steak strips to the skillet, stirring gently to combine with the cheesy rice.
  • Garnish with fresh lime juice and cilantro (optional) before serving.
  • Serve hot and enjoy!

Notes

  • For extra flavor, you can add sautéed onions and bell peppers when cooking the steak.
  • If you prefer a spicier dish, you can use a spicy queso or add a few dashes of hot sauce to the rice mixture.
