Ingredients
-
For the Lemon Loaf:
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3 large eggs
- 1 cup granulated sugar
- 1/2 cup sour cream or Greek yogurt
- 1/2 cup vegetable oil
- 2 tbsp unsalted butter, melted
- 2 tbsp lemon zest (from about 2 lemons)
- 1/4 cup fresh lemon juice
- 1 tsp vanilla extract
- 1/2 tsp lemon extract
For the Lemon Glaze:
- 1 cup powdered sugar
- 2–3 tbsp fresh lemon juice
- 1/2 tsp lemon zest (optional, for garnish)
Instructions
-
Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a loaf pan (9×5 inches).
-
Prepare Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.
-
Mix Wet Ingredients: In a large bowl, whisk together the eggs and granulated sugar until smooth. Add the sour cream (or Greek yogurt), vegetable oil, melted butter, lemon zest, lemon juice, vanilla extract, and lemon extract. Mix until well combined.
-
Combine Wet and Dry: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
-
Bake: Pour the batter into the prepared loaf pan and spread it out evenly. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
-
Cool: Allow the loaf to cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.
-
Prepare the Glaze: While the loaf is cooling, whisk together the powdered sugar, lemon juice, and optional lemon zest in a small bowl until smooth. If you prefer a thicker glaze, use less lemon juice; for a thinner glaze, add more.
-
Glaze the Loaf: Once the loaf has cooled completely, drizzle the lemon glaze over the top, allowing it to drip down the sides.
-
Serve: Slice and enjoy!
Notes
- You can substitute Greek yogurt for sour cream if you want a slightly tangier flavor.
- For a more intense lemon flavor, increase the amount of lemon extract or zest in the loaf and glaze.
- Make sure the loaf is completely cooled before glazing to avoid the glaze melting into the loaf.
