- 2 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- 1 large egg
- 2 cloves garlic, minced
- 1/2 teaspoon nutmeg
- Salt and pepper, to taste
- Olive oil, for drizzling
Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together the spinach, ricotta cheese, Parmesan cheese, breadcrumbs, egg, garlic, nutmeg, salt, and pepper until well combined.
- Shape the mixture into small balls and place them on the prepared baking sheet.
- Drizzle the balls with olive oil and bake for 20-25 minutes, or until golden brown.
- Serve hot and enjoy!

- These can be made ahead and stored in the fridge for up to 2 days before baking.
