  • 8 oz spaghetti
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 oz chorizo, casing removed and crumbled
  • 8 oz shrimp, peeled and deveined
  • 1 cup heavy cream
  • Salt and pepper, to taste
  • Olive oil, for cooking

Instructions

  • Cook the spaghetti according to package instructions. Drain and set aside.
  • In a large skillet, heat a drizzle of olive oil over medium heat.
  • Add the chopped red, yellow, and green bell peppers, onion, and garlic. Cook for about 5 minutes until the vegetables are softened.
  • Add the crumbled chorizo and cook until browned, about 3-4 minutes.
  • Add the shrimp to the skillet and cook until pink and opaque, about 2-3 minutes.
  • Pour in the heavy cream and stir to combine. Simmer the sauce for about 3-5 minutes until it thickens slightly.
  • Add the cooked spaghetti to the skillet and toss everything together until the pasta is evenly coated in the creamy sauce.
  • Season with salt and pepper to taste, and serve hot.

Notes

  • For added spice, you can use spicy chorizo or add a pinch of red pepper flakes.
  • This dish can be made ahead of time, but it’s best served fresh to maintain the creaminess of the sauce.
