  • 2 tbsp yellow cornmeal
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 2 tbsp mayonnaise
  • 1 tsp Worcestershire sauce
  • 1 tsp hot sauce (e.g., Texas Pete)
  • 1/2 tsp black pepper
  • 1 slice white bread, crumbled
  • 1/4 cup flour (added slowly, as needed for consistency)
  • Shortening or oil, enough to fry

Instructions

  • In a large mixing bowl, combine the drained and flaked canned salmon with the beaten eggs, chopped onion, and bell pepper.
  • Stir in the yellow cornmeal, salt, garlic powder, mayonnaise, Worcestershire sauce, hot sauce, black pepper, and crumbled bread.
  • Gradually add the flour to the mixture, stirring until the consistency holds together without being too wet.
  • Shape the salmon mixture into patties, about 2-3 inches in diameter.
  • Heat shortening or oil in a large skillet over medium heat. Once hot, carefully place the patties in the skillet and fry until golden brown on both sides, about 3-4 minutes per side.
  • Remove the patties from the skillet and drain on paper towels.
  • Serve immediately with your favorite sauce or side dishes.

Notes

  • For a lighter version, use olive oil or vegetable oil for frying.
  • You can add a dash of lemon juice to the mixture for an added zing of freshness.
