  • 1 ½ teaspoons pure vanilla extract

  • ¾ cup sprinkles

Instructions

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In a separate large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
  • Add the egg, vanilla extract, and almond extract (if using) to the butter-sugar mixture, and mix until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just incorporated. Be careful not to overmix.
  • Gently fold in the sprinkles, making sure they’re evenly distributed throughout the dough.
  • Scoop tablespoon-sized portions of dough and roll them into balls. Roll each ball in additional sprinkles, if desired, and place them on the prepared baking sheet, spacing them about 2 inches apart.
  • Gently press down on each dough ball with the back of a spoon to flatten slightly.
  • Bake for 10-12 minutes, or until the edges of the cookies are lightly golden. The center should still be soft.
  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For thicker cookies, add an extra tablespoon of flour as mentioned in the ingredients.
