- 2 cups coconut cream
- 1/2 cup sugar
- 1/4 cup lemon juice
- 1 quart ginger ale
- 1 pint vanilla ice cream
Instructions
- In a large bowl, combine pineapple juice, coconut cream, sugar, and lemon juice. Stir until sugar is dissolved.
- Chill the mixture for at least 1 hour.
- Just before serving, add ginger ale and stir gently.
- Scoop vanilla ice cream into a punch bowl.
- Pour the chilled punch over the ice cream and serve immediately.
Notes
- For a non-alcoholic punch, stick to the original ingredients, or for an adult version, add a splash of rum or coconut rum.
- This punch can be made ahead of time, just wait to add the ginger ale and ice cream until right before serving to keep it fizzy and fresh.
