Description

Snowy Pineapple Punch is a tropical, fizzy delight! With the creamy richness of coconut cream, the sweetness of pineapple juice, and a fizzy kick from ginger ale, this punch is the perfect holiday or party drink. It’s topped off with a scoop of vanilla ice cream for a snowy finish that everyone will love!


Ingredients

  • 1 can (46 oz) pineapple juice
  • 2 cups coconut cream
  • 1/2 cup sugar
  • 1/4 cup lemon juice
  • 1 quart ginger ale
  • 1 pint vanilla ice cream

Instructions

  • In a large bowl, combine pineapple juice, coconut cream, sugar, and lemon juice. Stir until sugar is dissolved.
  • Chill the mixture for at least 1 hour.
  • Just before serving, add ginger ale and stir gently.
  • Scoop vanilla ice cream into a punch bowl.
  • Pour the chilled punch over the ice cream and serve immediately.

Notes

  • For a non-alcoholic punch, stick to the original ingredients, or for an adult version, add a splash of rum or coconut rum.
  • This punch can be made ahead of time, just wait to add the ginger ale and ice cream until right before serving to keep it fizzy and fresh.
