  • 1 cup coconut milk or cream of coconut
  • 2 cups pineapple juice, chilled
  • 2 cups ginger ale, chilled
  • 1 pint vanilla ice cream
  • 1/4 cup shredded coconut (optional, for garnish)
  • Maraschino cherries (optional, for garnish)

Instructions

  • Blend the Pineapple Base: In a blender, combine the crushed pineapple and coconut milk. Blend until smooth.
  • Mix the Punch: In a large punch bowl or pitcher, combine the pineapple-coconut mixture with the pineapple juice. Stir to mix well.
  • Add the Ginger Ale and Ice Cream: Slowly pour in the chilled ginger ale, stirring gently to preserve the fizz. Scoop the vanilla ice cream into the punch bowl, allowing it to float and melt slightly for a creamy effect.
