- ½ cup (120 g) heavy whipping cream or coconut cream
- 4 tablespoons (56 g) unsalted butter or coconut oil, melted
- 3 scoops (90 g) unflavored whey protein (vanilla whey protein works too)
- ½ cup (96 g) powdered sweetener (use keto-friendly sweeteners for best results)
- ½ cup (60 g) coconut flour
- ¾ cup (64 g) unsweetened grated coconut, plus extra for rolling
- 1 teaspoon vanilla extract (optional)
Instructions
- Heat the Cream: In a small saucepan over low heat, warm the heavy whipping cream (or coconut cream) until it just begins to simmer. Be careful not to let it boil.
- Combine the Wet Ingredients: In a mixing bowl, combine the melted butter (or coconut oil) and vanilla extract (if using). Add the warmed cream and mix well.
- Add Dry Ingredients: Slowly add the whey protein, powdered sweetener, coconut flour, and grated coconut to the wet ingredients. Stir to combine into a thick, dough-like consistency.
- Chill the Dough: Cover the bowl and refrigerate the mixture for about 30 minutes, or until it firms up enough to roll into balls.
- Form the Truffles: Once chilled, scoop out small amounts of the mixture (about 1 tablespoon each) and roll them into balls using your hands.
- Coat with Coconut: Roll each truffle in the extra grated coconut to coat them evenly. If you prefer, you can chill the truffles again for a firmer texture.
- Serve and Store: Serve immediately or store in an airtight container in the refrigerator for up to 1 week.

- Protein Powder: If you don’t have unflavored whey protein, vanilla whey protein works just as well, adding a subtle vanilla flavor to the truffles.
- Sweeteners: Choose a keto-friendly powdered sweetener, such as erythritol or monk fruit, to keep these truffles low-carb.
- Coconut Flour: Coconut flour absorbs a lot of liquid, so don’t be tempted to add extra. If the dough feels too dry after mixing, add a little more cream until it reaches the desired consistency.
