Snickerdoodle Cobbler

  • Author: Mary
  • Total Time: 50–55 minutes
  • Yield: 6-8 servings 1x

Description

A warm, gooey, and comforting dessert that combines the flavors of a classic snickerdoodle cookie with a decadent cobbler. This dessert is topped with a cinnamon-sugar crust and baked to perfection, making it a cozy treat perfect for any occasion.

Ingredients

Scale
  • For the Cobbler:

    • 1/3 cup unsalted butter, melted
    • 3/4 cup whole milk
    • 2 teaspoons vanilla extract
    • 1 1/2 cups sugar
    • 1 1/2 cups all-purpose flour
    • 2 1/4 teaspoons baking powder
    • 3/4 teaspoon salt
    • 2 teaspoons ground cinnamon
    • 1 1/2 cups brown sugar, packed
    • 1 1/2 cups hot water

    For the Topping:

    • 1/4 cup sugar
    • 1/2 teaspoon ground cinnamon

Instructions

  • Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or a similar-sized pan.
  • In a large mixing bowl, combine the melted butter, whole milk, and vanilla extract. Stir in the sugar, flour, baking powder, salt, and ground cinnamon until well combined.
  • Pour the batter into the prepared baking dish, spreading it out evenly.
  • In a separate bowl, combine the brown sugar with the hot water. Carefully pour the brown sugar mixture over the batter in the baking dish—do not stir.
  • In a small bowl, combine the sugar and cinnamon for the topping. Sprinkle this mixture evenly over the top of the cobbler.
  • Bake for 40-45 minutes, or until the cobbler is golden brown and the sauce has thickened. The top will be slightly crispy, while the inside will be soft and gooey.
  • Let the cobbler cool for a few minutes before serving. It’s delicious on its own or served with a scoop of vanilla ice cream or whipped cream.

Notes

  • The hot water and brown sugar mixture create a delicious syrup that seeps into the batter as it bakes, giving the cobbler its signature gooey texture.
  • For an added twist, you can sprinkle some chopped nuts (like walnuts or pecans) over the top before baking.
  • This dessert can be made ahead of time and reheated, though it’s best served warm and fresh from the oven.
