Description
Slow Cooker French Dip Sandwiches are an easy and flavorful comfort food. Tender beef roast cooked in a savory broth with onions, garlic, and spices, served on crusty rolls with melted cheese. Perfect for a delicious dinner or game day meal!

- 2–3 pound beef chuck roast or rump roast, trimmed of excess fat (you can also use sirloin roast or boneless bottom round for a leaner option)
- 3 cups low-sodium beef broth
- ¼ cup Worcestershire sauce
- 2 tablespoons extra virgin olive oil
- 2 yellow onions, quartered and thinly sliced
- 3 cloves of garlic, minced
- 1 bay leaf
- Salt and pepper, to taste
- 4–6 rolls (choose rolls that are not too soft to prevent falling apart when dipped)
- 8–12 slices cheese (provolone, Swiss, Havarti, or Monterey Jack)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Sear the beef roast on all sides until browned, about 3-4 minutes per side.
- Transfer the seared beef roast to the slow cooker.
- In the same skillet, add the onions and garlic and sauté for 2-3 minutes until softened. Transfer the onions and garlic to the slow cooker.
- Add the beef broth, Worcestershire sauce, bay leaf, salt, and pepper to the slow cooker. Stir to combine.
- Cover and cook on low for 7-8 hours, or until the beef is tender and easily shreds with a fork.
- Once the beef is done, remove it from the slow cooker and shred with two forks. Discard the bay leaf.
- To assemble the sandwiches, slice the rolls and lightly toast them.
- Place shredded beef on each roll and top with 1-2 slices of cheese.
- If desired, place the assembled sandwiches under a broiler for 2-3 minutes to melt the cheese.
- Serve the sandwiches with a side of the broth (au jus) for dipping.
Notes
- For best results, use a crusty, hearty roll such as a baguette or hoagie-style roll to hold up to the dipping.
- You can make the au jus ahead of time and store it in the refrigerator for a few days. Simply reheat it when serving.
- If you prefer extra flavor, you can add a splash of red wine or balsamic vinegar to the broth for added depth.
