  • Author: Mary
  • Total Time: 45 minutes (including soaking time)
  • Yield: 8 servings 1x

Description

Rum-Soaked Fried Pineapple with Coconut Crust is a tropical dessert that transforms pineapple into a luxurious treat. The pineapple rings are soaked in dark and coconut rum, then fried with a crispy coconut crust, creating an irresistible combination of flavors. Perfect for a special occasion or an exotic twist on your typical dessert.

Ingredients

Scale
  • 8 pineapple rings
  • 1 cup dark rum
  • 1 cup coconut rum
  • 1 ½ cups all-purpose flour
  • 1 (10-oz.) bag sweetened coconut flakes
  • 2 large eggs
  • ½ cup coconut milk
  • Vegetable oil, for frying
  • 4 oz. cream cheese, softened
  • ½ cup powdered sugar

Instructions

  • Soak the pineapple: In a shallow dish, combine the dark rum and coconut rum. Add the pineapple rings to the rum mixture and let them soak for about 30 minutes, turning halfway through to ensure all sides are soaked.

  • Prepare the coconut crust: In a shallow bowl, combine the all-purpose flour and sweetened coconut flakes. In another bowl, whisk the eggs with the coconut milk.

  • Coat the pineapple: After the pineapple has soaked, dip each ring into the egg mixture, then coat thoroughly with the flour and coconut mixture, pressing lightly to ensure the crust sticks.

  • Fry the pineapple: Heat vegetable oil in a frying pan over medium heat. Once the oil is hot, carefully place the pineapple rings in the pan and fry until golden brown and crispy on both sides, about 2-3 minutes per side. Remove from the oil and place on a paper towel-lined plate to drain excess oil.

  • Prepare the cream cheese glaze: In a small bowl, mix the softened cream cheese with powdered sugar until smooth and creamy.

  • Serve: Plate the fried pineapple rings and drizzle with the cream cheese glaze. Serve warm and enjoy!

Notes

  • The rum soak can be adjusted based on your preference for rum flavor.
  • For extra flavor, you can add a pinch of cinnamon or nutmeg to the coconut crust.
  • If you don’t have coconut milk, you can substitute with regular milk or heavy cream, but coconut milk adds a tropical richness that enhances the flavor.
