Ingredients

Scale

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted

For the Filling:

  • 4 (8-ounce) packages cream cheese, softened
  • 1 1/4 cups sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt

Instructions

  • Preheat the Oven: Preheat your oven to 325°F (165°C).
  • Prepare the Crust: In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Mix well. Press the mixture into the bottom of a 9-inch springform pan to form an even crust.
  • Make the Filling: In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add in 1 1/4 cups sugar and vanilla extract, mixing until creamy and well combined.
  • Add the Eggs: Add the eggs one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.
  • Finish the Filling: Mix in the sour cream, flour, and salt until fully incorporated and the batter is smooth.
  • Assemble the Cheesecake: Pour the cream cheese mixture over the prepared crust in the springform pan. Smooth the top with a spatula.
  • Bake: Bake for 55-60 minutes, or until the center is set but still slightly jiggly. The cheesecake will continue to firm up as it cools.
  • Cool in the Oven: Turn off the oven, crack the oven door, and let the cheesecake cool in the oven for 1 hour.
  • Chill: After 1 hour, remove the cheesecake from the oven and refrigerate for at least 4 hours, or preferably overnight, to fully set before serving.

Notes

  • Let the cheesecake cool slowly in the oven with the door cracked to prevent cracking on the surface.
  • For best results, chill the cheesecake overnight. The flavors will deepen, and the texture will firm up beautifully.
  • Add toppings such as fresh berries, fruit compote, or whipped cream for a delicious finish.
  • If the edges begin to crack while baking, it’s an indication that the cheesecake was baked too long. Ensure your oven temperature is accurate and avoid overbaking.
