  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and line a 9-inch round cake pan or pizza pan with parchment paper.
  2. Prepare the Cookie Dough: In a medium bowl, whisk together the flour, cornstarch, baking soda, salt, and cocoa powder. In a separate large bowl, beat together the softened butter, granulated sugar, and brown sugar until creamy and light. Add the egg, vanilla extract, buttermilk, and red gel food coloring, mixing until well combined.
  3. Combine the Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the white chocolate chips, if using.
  4. Bake the Cookie Cake: Spread the dough evenly into the prepared pan. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. Let the cookie cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
