These Peaches and Cream Cheesecake Bars combine a buttery, soft base with a creamy cheesecake layer and a fruity peach topping. A delicious and refreshing dessert perfect for summer or any occasion!

- 1 cup unsalted butter, softened
- 2 cups sugar
- 4 large eggs
- 8 oz cream cheese, softened
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 2 cups fresh or canned peaches (drained and chopped if using canned)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a large mixing bowl, cream together the butter and sugar until smooth and fluffy. Beat in the eggs one at a time.
- In a separate bowl, mix the flour, baking powder, and salt. Gradually add this dry mixture to the butter mixture and mix until just combined.
- In a separate bowl, beat the softened cream cheese with vanilla extract until smooth and creamy.
- Pour half of the batter into the prepared baking dish, spreading it evenly.
- Layer the chopped peaches over the batter.
- Spread the remaining batter on top of the peaches and smooth it out.
- Bake in the preheated oven for 30-35 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
- Allow the bars to cool completely before cutting them into squares.
- Serve chilled or at room temperature and enjoy!
Notes
- You can use fresh or canned peaches. If using canned, make sure to drain them well to avoid excess moisture.
- For an extra touch, top with whipped cream or a drizzle of caramel sauce before serving.
- These bars can be stored in the fridge for up to 3-4 days.
