- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup unsalted butter, cold and cut into small pieces
- 1 egg
- 4 cups fresh peaches, peeled and sliced
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
- 1/2 teaspoon cinnamon
Instructions
- Preheat the oven to 375°F (190°C) and grease a 9×13 inch baking dish.
- In a large bowl, combine the flour, 1 cup sugar, baking powder, and salt. Cut in the cold butter and egg until the mixture resembles coarse crumbs.
- Press half of the mixture into the bottom of the prepared baking dish to form the crust.
- In another bowl, mix together the peaches, 1/2 cup sugar, cornstarch, and cinnamon. Spread the peach mixture evenly over the crust.
- Crumble the remaining flour mixture over the top of the peach layer.
- Bake in the preheated oven for 45-50 minutes, or until the top is golden brown.
- Allow the bars to cool completely before cutting into squares.
Notes
- You can substitute frozen peaches if fresh ones aren’t available. Just be sure to thaw and drain them before using.
- Add a scoop of vanilla ice cream or a dollop of whipped cream for extra indulgence.
- These bars store well in an airtight container for up to 3 days.
