Ingredients

Scale

For the Casserole:

  • 3 cups cooked chicken, shredded
  • 1 (10.5 oz) can cream of chicken soup
  • 1 (10.5 oz) can cream of mushroom soup
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 2 cups egg noodles, cooked and drained
  • 1 (14.5 oz) can diced tomatoes, drained (optional)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper, to taste

For the Topping:

  • 1 cup crushed cornflakes
  • 2 tbsp butter, melted

Instructions

  • Preheat the Oven: Preheat your oven to 350°F (175°C).
  • Prepare the Casserole Mixture: In a large bowl, combine the shredded chicken, both cans of soup, sour cream, mayonnaise, garlic powder, onion powder, salt, and pepper. Stir until creamy.
  • Add the Noodles and Tomatoes: Fold in the cooked egg noodles and diced tomatoes (if using).
  • Assemble the Casserole: Spread the mixture into a greased 9×13-inch baking dish.
  • Add the Cheese: Sprinkle the shredded cheddar cheese evenly over the top.
  • Add the Topping: In a small bowl, mix the crushed cornflakes with the melted butter. Sprinkle the cornflake mixture over the cheese.
  • Bake: Bake for 30-35 minutes, or until the casserole is bubbly and golden brown.
  • Cool and Serve: Let the casserole cool slightly before serving.

Notes

  • Rotisserie Chicken: You can use rotisserie chicken for this recipe to save time and add extra flavor.
  • Lighter Version: For a lighter version, substitute the sour cream and mayonnaise with Greek yogurt, and use low-fat soups and cheese.
  • Soup Substitutes: You can use homemade creamy soups or condensed vegetable soup if you prefer not to use cream of chicken or mushroom soup.
  • Storing Leftovers: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven at 350°F or microwave.
