- 2.4 lb baby potatoes, scrubbed and halved (leave the skin on for extra texture)
- 1.8 oz parmesan cheese (about 1 cup grated)
- 2 tablespoons olive oil, divided
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- For a dairy-free option, substitute parmesan with a vegan cheese alternative
- Optional: A pinch of cayenne pepper for extra heat
- Optional: Use sweet potatoes instead of baby potatoes for a different flavor
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the halved baby potatoes with 1 tablespoon of olive oil, paprika, garlic powder, dried oregano, sea salt, and black pepper.
- Spread the seasoned potatoes in a single layer on a baking sheet, cut side down.
- Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden and tender.
- While the potatoes are roasting, mix the grated parmesan cheese with the remaining 1 tablespoon of olive oil.
- After 25-30 minutes, remove the potatoes from the oven and sprinkle the parmesan mixture evenly over the top of the potatoes.
- Return the potatoes to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and slightly crispy.
- Remove from the oven and serve hot.
Notes
- For extra flavor, you can add a sprinkle of fresh parsley or chives before serving.
- If you prefer a spicy kick, add a pinch of cayenne pepper when tossing the potatoes with the seasonings.
- Sweet potatoes can be used for a slightly sweeter and unique flavor profile. Simply follow the same method.
