Treat yourself to a delightful breakfast with these fluffy pancakes stacked high and topped with sweet strawberries and homemade whipped cream. The perfect combination of light, airy pancakes, juicy strawberries, and creamy whipped goodness!

For the pancakes:

  • 1 1/2 cups all-purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup buttermilk (or regular milk)
  • 1 large egg
  • 2 tbsp unsalted butter, melted
  • 1 tsp vanilla extract

For the strawberry topping:

  • 2 cups fresh strawberries, hulled and sliced
  • 12 tbsp sugar (adjust based on sweetness of strawberries)
  • 1/2 tsp vanilla extract

For the whipped cream:

  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

Instructions

  • Make the Strawberry Topping: In a medium bowl, combine the sliced strawberries, sugar, and vanilla extract. Let the mixture sit for at least 10 minutes to allow the strawberries to release their juices and become syrupy.
  • Prepare the Pancake Batter: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In a separate bowl, whisk together the buttermilk (or regular milk), egg, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and gently stir until just combined. The batter should be slightly lumpy.
  • Cook the Pancakes: Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or cooking spray. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles appear on the surface, then flip and cook for another 1-2 minutes, or until golden brown on both sides. Repeat with the remaining batter.
  • Make the Whipped Cream: In a mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract using a hand mixer or stand mixer until soft peaks form.
  • Assemble the Stack: Stack the pancakes on a serving plate, spoon the strawberry topping over the pancakes, and finish with a generous dollop of whipped cream. Serve immediately!

Notes

  • You can make the strawberry topping ahead of time and refrigerate it until you’re ready to serve.
  • For a richer flavor, you can substitute half of the buttermilk with heavy cream in the pancake batter.
