- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 1/2 cup chopped fresh basil
- 1/4 cup black olives, pitted and chopped
- 1/4 cup capers
- Lemon wedges for serving
Instructions
- Season the cod fillets with salt and pepper.
- Heat olive oil in a large skillet over medium heat.
- Add the cod fillets and cook for 4-5 minutes per side, until golden brown and cooked through. Remove from skillet and set aside.
- In the same skillet, add the onion and garlic. Cook until softened.
- Add the diced tomatoes, basil, olives, and capers. Simmer for 10 minutes.
- Return the cod fillets to the skillet and spoon the tomato basil sauce over them. Cook for an additional 2-3 minutes.
- Serve the cod with lemon wedges on the side.
