  • 4 cod fillets
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1/2 cup chopped fresh basil
  • 1/4 cup black olives, pitted and chopped
  • 1/4 cup capers
  • Lemon wedges for serving

Instructions

  • Season the cod fillets with salt and pepper.
  • Heat olive oil in a large skillet over medium heat.
  • Add the cod fillets and cook for 4-5 minutes per side, until golden brown and cooked through. Remove from skillet and set aside.
  • In the same skillet, add the onion and garlic. Cook until softened.
  • Add the diced tomatoes, basil, olives, and capers. Simmer for 10 minutes.
  • Return the cod fillets to the skillet and spoon the tomato basil sauce over them. Cook for an additional 2-3 minutes.
  • Serve the cod with lemon wedges on the side.
