Ingredients

    • 1 lb thick bread, cubed (preferably day-old or stale)
    • 1 1/3 cups applesauce (or mashed banana)
    • 2/3 cup milk (of choice)
    • 2/3 cup egg whites (or additional milk of choice for a dairy-free version)
    • 1/4 cup pure maple syrup (or agave or honey)
    • 1 tsp pure vanilla extract (optional)


Instructions

  • Prepare the casserole:

    • Lightly grease a 9×13-inch baking dish.
    • Spread the cubed bread evenly in the bottom of the dish.
    • Layer the fresh berries over the bread cubes.
  • Make the egg mixture:

    • In a bowl, whisk together the applesauce (or mashed banana), milk, egg whites (or extra milk), maple syrup, and vanilla extract (if using).
    • Pour this mixture evenly over the bread and berry layers in the baking dish. Use a spoon to gently press down the bread to help it soak up the liquid.
  • Refrigerate overnight:

    • Cover the baking dish with plastic wrap or aluminum foil and refrigerate overnight (at least 6 hours).
  • Bake the casserole:

    • In the morning, preheat your oven to 350°F (175°C).
    • Remove the casserole from the refrigerator and let it sit for about 10-15 minutes to take off the chill.
    • Bake for 45-50 minutes, or until the casserole is set in the center and golden brown on top.
  • Serve and enjoy:

    • Let the casserole cool for a few minutes before serving. It can be served warm, and you can drizzle extra maple syrup or add a dollop of whipped cream if desired.

Notes

  • You can use frozen berries if fresh berries are not available, but be sure to thaw and drain them before using.
  • If you prefer a sweeter casserole, you can add more maple syrup or honey to the egg mixture.
