- 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp Italian seasoning
- 1 tbsp olive oil
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 24 oz marinara sauce
- 2 1/2 cups chicken broth
- 8 oz penne pasta
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil, chopped (for garnish)
Instructions
- Season the chicken pieces with salt, pepper, garlic powder, onion powder, and Italian seasoning.
- In a large pot, heat olive oil over medium-high heat. Add the seasoned chicken pieces and cook until browned, about 5 minutes.
- Add diced onion and minced garlic to the pot and cook for another 2 minutes.
- Pour in the marinara sauce and chicken broth, then add the penne pasta. Stir to combine.
- Bring the mixture to a boil, then reduce heat to low and cover. Simmer for 15-20 minutes, or until pasta is cooked through.
- Stir in the mozzarella and Parmesan cheeses until melted and combined.
- Serve hot, garnished with chopped fresh basil.
Notes
- For a creamier version, add a splash of heavy cream along with the marinara sauce.
- If you prefer a different pasta shape, feel free to substitute the penne with rigatoni, rotini, or your favorite pasta.
- Make sure to stir occasionally to prevent the pasta from sticking to the pot.
