Instructions

  • Prepare the base: Break the graham crackers into smaller pieces or crush them into crumbs using a food processor. Place the crumbs in a large bowl.

  • Mix the peanut butter filling: In a separate bowl, combine the creamy peanut butter, powdered sugar, and brown sugar. Stir until smooth and well-combined.

  • Combine the graham crackers and peanut butter: Gradually add the peanut butter mixture to the graham cracker crumbs and stir until evenly combined. You should have a dough-like consistency. If it’s too thick, add a little extra peanut butter to make it easier to mix.

  • Form the buckeyes: Roll the mixture into small balls, about 1-inch in size, and place them onto a lined baking sheet.

  • Melt the chocolate: In a microwave-safe bowl, combine the chocolate chips and coconut oil (if using). Microwave in 20-30 second intervals, stirring in between, until the chocolate is completely melted and smooth.
