- Fresh raspberries and blueberries for garnish
Instructions
- Prepare the Crust:
In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Stir until well mixed and the crumbs are fully coated.
Press the mixture into the bottom of a 9-inch pie dish or springform pan to form an even, firm crust. Refrigerate while you prepare the filling. - Make the Cheesecake Filling:
In a large bowl, beat the softened cream cheese until smooth. Add the powdered sugar and vanilla extract, and continue to beat until fully incorporated.
In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until smooth and fluffy. - Assemble the Cheesecake:
Pour the cream cheese mixture onto the prepared crust and spread evenly. Smooth the top with a spatula. - Add the Berry Layer:
Spoon the mixed berry jam over the cheesecake filling and spread it evenly. You can use a swirl pattern or spread it all over for a more even topping. - Chill:
Refrigerate the cheesecake for at least 4 hours, or preferably overnight, until it is set and firm. - Serve:
Before serving, garnish with fresh raspberries and blueberries on top. Slice and enjoy!
