  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 2 eggs, lightly beaten
  • 2 ½ cups unsweetened vanilla almond milk (or regular milk or coconut milk)
  • ½ cup pure maple syrup
  • 2 teaspoons pure vanilla extract
  • 3 tablespoons unsalted butter or coconut oil, melted
  • 3 cups fresh berries (larger berries chopped or sliced, e.g., strawberries, blueberries, raspberries)

Instructions

  • Preheat the oven to 375°F (190°C) and grease a 9×9-inch baking dish or similar-sized pan.
  • In a large bowl, combine the rolled oats, baking powder, and salt.
  • In another bowl, whisk together the eggs, almond milk, maple syrup, vanilla extract, and melted butter (or coconut oil).
  • Pour the wet ingredients into the dry ingredients and stir to combine.
  • Gently fold in the fresh berries.
  • Pour the mixture into the prepared baking dish and spread it evenly.
  • Bake for 35-40 minutes, or until the top is golden brown and the oatmeal is set.
  • Let it cool for a few minutes before serving.
  • Serve warm with additional almond milk, if desired, and enjoy!

Notes

  • This baked oatmeal can be stored in the refrigerator for up to 4 days, making it perfect for meal prep.
  • You can substitute the fresh berries with frozen berries if needed. Just be sure to thaw and drain them before adding.
