- 3 cups old fashioned rolled oats
- 1 ½ teaspoons baking powder
- ½ teaspoon salt
- 2 eggs, lightly beaten
- 2 ½ cups unsweetened vanilla almond milk (or regular milk or coconut milk)
- ½ cup pure maple syrup
- 2 teaspoons pure vanilla extract
- 3 tablespoons unsalted butter or coconut oil, melted
- 3 cups fresh berries (larger berries chopped or sliced, e.g., strawberries, blueberries, raspberries)
Instructions
- Preheat the oven to 375°F (190°C) and grease a 9×9-inch baking dish or similar-sized pan.
- In a large bowl, combine the rolled oats, baking powder, and salt.
- In another bowl, whisk together the eggs, almond milk, maple syrup, vanilla extract, and melted butter (or coconut oil).
- Pour the wet ingredients into the dry ingredients and stir to combine.
- Gently fold in the fresh berries.
- Pour the mixture into the prepared baking dish and spread it evenly.
- Bake for 35-40 minutes, or until the top is golden brown and the oatmeal is set.
- Let it cool for a few minutes before serving.
- Serve warm with additional almond milk, if desired, and enjoy!

- This baked oatmeal can be stored in the refrigerator for up to 4 days, making it perfect for meal prep.
- You can substitute the fresh berries with frozen berries if needed. Just be sure to thaw and drain them before adding.
