Mini Meatloafs are a fun and easy twist on a classic dinner. These savory, individual meatloafs are made with ground beef, flavorful seasonings, and a bit of cheese, then baked with tender potatoes for a wholesome meal. Perfect for busy nights or meal prepping!

Meatloaf:
- Cooking spray
- 1 pound ground beef (90/10)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- 3/4 teaspoon Worcestershire sauce
- 2–4 tablespoons ketchup
- 1/3 cup Romano or Parmesan cheese, grated
- 1/3 cup seasoned breadcrumbs
- 1 large egg
- Warm water (optional, if mixture is too dry)
Instructions
- Preheat the oven to 375°F (190°C). Spray a mini muffin tin or baking dish with cooking spray to prevent sticking.
- In a large mixing bowl, combine the ground beef, garlic powder, kosher salt, ground black pepper, Worcestershire sauce, 2 tablespoons ketchup, Romano or Parmesan cheese, seasoned breadcrumbs, and egg.
- If the mixture feels too dry, add a little warm water, one tablespoon at a time, until the mixture holds together well but is not too wet.
- Shape the meat mixture into small meatloafs (about 6-8) and place them into the prepared muffin tin or baking dish.
- Top each meatloaf with a small dollop of ketchup, about 1/2 teaspoon per loaf.
- Bake in the preheated oven for 20-25 minutes, or until the meatloafs reach an internal temperature of 160°F (71°C).
- While the meatloafs bake, wash and dice potatoes into small cubes. You can roast or boil them separately, or bake them alongside the meatloafs, seasoned with olive oil, salt, and pepper.
- Serve the mini meatloafs alongside the cooked potatoes. Optionally, garnish with fresh herbs or additional cheese.
Notes
- You can customize the recipe by adding chopped onions, bell peppers, or herbs to the meat mixture.
- For a healthier version, consider using leaner ground turkey or chicken instead of ground beef.
- If you don’t have a mini muffin tin, you can shape the meatloafs by hand and bake them on a sheet pan.
- For extra flavor, consider topping the mini meatloafs with a bit of barbecue sauce or a sprinkle of cheese in the last 5 minutes of baking.
