Ingredients

Scale
  • 4 salmon fillets, skinless
  • 2 tablespoons olive oil, divided
  • 2 teaspoons dried Italian seasoning
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon cracked black pepper
  • 3 tablespoons butter
  • 2 teaspoons garlic, minced
  • 3 tablespoons flour
  • 1 1/2 cups chicken broth
  • 3/4 cup heavy cream
  • 1/2 cup parmesan, grated
  • 1/2 cup sun-dried tomatoes, drained
  • 1 teaspoon dried Italian seasoning (for the sauce)
  • 1 teaspoon lemon zest
  • Fresh basil, for garnish

Instructions

  • Prep the Salmon: Pat the salmon fillets dry with paper towels. Season both sides with 1 teaspoon of Italian seasoning, salt, and cracked black pepper.
  • Sear the Salmon: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add the salmon fillets and cook for 3-4 minutes per side, or until the salmon is golden brown and cooked through (internal temperature should reach 145°F or 63°C). Remove the salmon from the skillet and set aside.
  • Make the Sauce: In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for 30 seconds until fragrant. Stir in the flour and cook for 1-2 minutes to form a roux, making sure it doesn’t burn.
  • Add Liquids: Slowly whisk in the chicken broth, followed by the heavy cream, and continue to cook, stirring constantly, until the sauce thickens (about 3-5 minutes).
  • Finish the Sauce: Stir in the grated Parmesan cheese, sun-dried tomatoes, the remaining 1 teaspoon of Italian seasoning, and the lemon zest. Taste and adjust seasoning as needed, adding more salt or pepper to your liking.
  • Combine and Serve: Return the salmon fillets to the skillet and spoon the sauce over them. Let the salmon simmer in the sauce for another 2-3 minutes to heat through and soak up the flavors.
  • Garnish and Serve: Garnish the salmon with fresh basil and serve immediately. Pair it with your favorite side dish, like roasted vegetables or mashed potatoes.

Notes

  • If you prefer, you can use fresh tomatoes instead of sun-dried tomatoes, though the sun-dried variety gives the dish extra depth of flavor.
  • For a lower-fat version, you can substitute the heavy cream with half-and-half or a lighter cream option.
  • This recipe is rich and creamy, so serve it with something light, like a side of greens or a simple salad.
