Magic Lemon Cobbler Delight Recipe

  • Author: Mary
  • Total Time: 50-55 minutes
  • Yield: 8 servings 1x

Description

This Magic Lemon Cobbler Delight is a refreshing and indulgent dessert that features a tangy lemon flavor with a buttery, cobbler-like texture. With a layer of zesty lemon on top and a soft, custard-like base, it’s a perfect balance of sweet and tart in every bite.

Ingredients

Scale
  • ½ cup unsalted butter

  • 1 cup all-purpose flour

  • 1 ½ cups granulated sugar, divided

  • 1 tablespoon baking powder

  • ¼ teaspoon salt

  • 1 cup milk

  • ¼ cup lemon juice

  • Zest of 1 lemon

  • 2 cups hot water

Instructions

  • Preheat the Oven: Preheat your oven to 350°F (175°C).

  • Prepare the Baking Dish: Melt the unsalted butter and pour it into the bottom of a 9×9-inch baking dish. Do not stir the butter once it’s poured.

  • Make the Dry Mixture: In a medium-sized mixing bowl, combine the all-purpose flour, 1 cup of granulated sugar, baking powder, and salt. Stir until well mixed.

  • Add Wet Ingredients: Gradually stir in the milk, lemon juice, and lemon zest to the dry ingredients, mixing until just combined. The batter will be somewhat lumpy.

  • Assemble the Cobbler: Pour the batter over the melted butter in the baking dish. Do not stir the mixture; the butter will rise to the top as it bakes.

  • Add Hot Water: Gently pour the hot water over the batter. Do not stir. This will create the “magic” layers, with a soft top and a gooey, lemony base.

  • Bake: Bake in the preheated oven for 40-45 minutes, or until the cobbler is golden and bubbly around the edges.

  • Serve: Let the cobbler cool slightly before serving. It’s delicious served warm with a scoop of vanilla ice cream or a dollop of whipped cream.

Notes

  • This dessert creates its own sauce as it bakes, so don’t be surprised if the batter appears thin before baking.

  • For an extra zing, you can add a little more lemon zest to the batter or serve with extra lemon slices.

  • The cobbler will firm up as it cools, but it will remain wonderfully soft and custardy in the middle.
