This simple yet delicious loaf cake has a soft, moist crumb with a golden brown crust. Perfect for breakfast, tea time, or a light dessert, it’s easy to make and a great addition to any occasion.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup butter, softened
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • Pinch of salt

Instructions

  • Preheat oven to 350°F (175°C). Grease and flour a loaf pan.
  • In a mixing bowl, cream together the butter and sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  • In a separate bowl, combine the flour, baking powder, and salt. Gradually add this to the wet ingredients, mixing until just combined.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • You can add chocolate chips, dried fruit, or nuts for extra flavor and texture.
  • Make sure the cake is fully cooled before slicing to avoid it becoming too crumbly.
