Ingredients
Scale
- ¾ cup olive oil
- ½ cup fresh lemon juice
- 2 tablespoons white vinegar
- 1 tablespoon Dijon mustard
- 2 cloves garlic, pressed
- 2 teaspoons white sugar
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Combine Ingredients: In a small bowl or jar, combine the olive oil, fresh lemon juice, white vinegar, Dijon mustard, pressed garlic, sugar, dried oregano, salt, and pepper.
- Whisk or Shake: Whisk the ingredients together until the dressing is emulsified, or if using a jar, seal and shake vigorously.
- Taste and Adjust: Taste the dressing and adjust the seasoning with more salt, pepper, or sugar if needed. If you prefer a tangier dressing, add a little more lemon juice or vinegar.
- Serve: Drizzle over your favorite salad, roasted vegetables, or use as a marinade for meats.
- Store: Store any leftover dressing in an airtight container in the fridge for up to a week. Shake or stir before using.
Notes
- This vinaigrette pairs perfectly with leafy green salads, but can also be used on grain bowls or as a dip for vegetables.
- If you prefer a creamy vinaigrette, you can add a tablespoon of Greek yogurt or mayonnaise to the dressing.
- You can substitute honey or maple syrup for the white sugar if you prefer a natural sweetener.
