  • Author: Mary
  • Total Time: 5 minutes
  • Yield: 1 cup (about 8 servings) 1x

Description

This bright and tangy Lemon Vinaigrette Dressing is perfect for drizzling over salads, roasted vegetables, or even as a marinade for chicken. Made with fresh lemon juice, olive oil, and a touch of Dijon mustard, it’s a quick and simple way to add a burst of citrus flavor to your meals.

Ingredients

Scale
  • ¾ cup olive oil
  • ½ cup fresh lemon juice
  • 2 tablespoons white vinegar
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, pressed
  • 2 teaspoons white sugar
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  • Combine Ingredients: In a small bowl or jar, combine the olive oil, fresh lemon juice, white vinegar, Dijon mustard, pressed garlic, sugar, dried oregano, salt, and pepper.
  • Whisk or Shake: Whisk the ingredients together until the dressing is emulsified, or if using a jar, seal and shake vigorously.
  • Taste and Adjust: Taste the dressing and adjust the seasoning with more salt, pepper, or sugar if needed. If you prefer a tangier dressing, add a little more lemon juice or vinegar.
  • Serve: Drizzle over your favorite salad, roasted vegetables, or use as a marinade for meats.
  • Store: Store any leftover dressing in an airtight container in the fridge for up to a week. Shake or stir before using.

Notes

  • This vinaigrette pairs perfectly with leafy green salads, but can also be used on grain bowls or as a dip for vegetables.
  • If you prefer a creamy vinaigrette, you can add a tablespoon of Greek yogurt or mayonnaise to the dressing.
  • You can substitute honey or maple syrup for the white sugar if you prefer a natural sweetener.
