For the Key Lime Cake:
- 1 cup Canola or Olive Oil
- 3 large Eggs
- 1 1/3 cups Whole Milk
- 2 Tablespoons Fresh Lime Zest
- 1 Tablespoon Fresh Lime Juice
- 2 cups Sugar
- 2 cups Flour
- 1 teaspoon Baking Powder
- 1/2 teaspoon Baking Soda
- 1 teaspoon Salt
For the Lime Cream Cheese Frosting:
- 1/2 cup Butter (softened)
- 8 ounces Cream Cheese (softened)
- 4 – 4 1/2 cups Powdered Sugar
- 1 Tablespoon Fresh Lime Juice
- 1/2 teaspoon Fresh Lime Zest
- Fresh Limes (sliced for garnish)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, beat together the oil, eggs, and sugar until light and fluffy.
- Add the milk, lime zest, and lime juice to the mixture and continue to mix until well combined.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Divide the batter evenly between the prepared cake pans and smooth the tops.
- Bake for 25-30 minutes or until a toothpick inserted into the center of the cakes comes out clean.
- Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
For the Lime Cream Cheese Frosting:
- In a mixing bowl, beat together the softened butter and cream cheese until smooth and fluffy.
- Gradually add the powdered sugar, 1 cup at a time, mixing well after each addition.
- Add the lime juice and zest, and continue beating until smooth and creamy.
- Once the cakes are completely cool, frost the top of one cake layer, then place the second layer on top and frost the top and sides.
- Garnish with lime slices for decoration.
Notes
- You can use either canola oil or olive oil for this recipe depending on your preference, but canola oil tends to be a bit more neutral in flavor.
- If you want a more intense lime flavor, increase the lime zest or juice in the frosting.
- Store the cake in an airtight container at room temperature for up to 3 days, or refrigerate for longer shelf life.
