For the Key Lime Cake:

  • 1 cup Canola or Olive Oil
  • 3 large Eggs
  • 1 1/3 cups Whole Milk
  • 2 Tablespoons Fresh Lime Zest
  • 1 Tablespoon Fresh Lime Juice
  • 2 cups Sugar
  • 2 cups Flour
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1 teaspoon Salt

For the Lime Cream Cheese Frosting:

  • 1/2 cup Butter (softened)
  • 8 ounces Cream Cheese (softened)
  • 44 1/2 cups Powdered Sugar
  • 1 Tablespoon Fresh Lime Juice
  • 1/2 teaspoon Fresh Lime Zest
  • Fresh Limes (sliced for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, beat together the oil, eggs, and sugar until light and fluffy.
  3. Add the milk, lime zest, and lime juice to the mixture and continue to mix until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Divide the batter evenly between the prepared cake pans and smooth the tops.
  7. Bake for 25-30 minutes or until a toothpick inserted into the center of the cakes comes out clean.
  8. Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

For the Lime Cream Cheese Frosting:

  1. In a mixing bowl, beat together the softened butter and cream cheese until smooth and fluffy.
  2. Gradually add the powdered sugar, 1 cup at a time, mixing well after each addition.
  3. Add the lime juice and zest, and continue beating until smooth and creamy.
  4. Once the cakes are completely cool, frost the top of one cake layer, then place the second layer on top and frost the top and sides.
  5. Garnish with lime slices for decoration.

Notes

  • You can use either canola oil or olive oil for this recipe depending on your preference, but canola oil tends to be a bit more neutral in flavor.
  • If you want a more intense lime flavor, increase the lime zest or juice in the frosting.
