Description

Keto Beef Stroganoff Meatballs are a low-carb twist on the classic stroganoff, featuring juicy beef meatballs in a creamy, tangy sauce made with sour cream, Dijon mustard, and Worcestershire sauce. Perfect for a hearty keto meal, these meatballs are full of flavor and will keep you satisfied without the carbs.

  • 1 lb ground beef
  • 1/2 cup almond flour
  • 1/4 cup grated parmesan cheese
  • 1/4 cup sour cream
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 1/2 cup beef broth
  • 1/2 cup sour cream
  • 1 tbsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • Chopped parsley for garnish

Instructions

  1. In a bowl, combine ground beef, almond flour, parmesan cheese, 1/4 cup sour cream, egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  2. Shape the mixture into meatballs.
  3. In a skillet, heat olive oil over medium heat. Add the meatballs and cook until browned on all sides.
  4. Remove the meatballs from the skillet and set aside.
  5. In the same skillet, add beef broth, 1/2 cup sour cream, Dijon mustard, and Worcestershire sauce. Stir until well combined.
  6. Return the meatballs to the skillet and simmer for 10-15 minutes.
  7. Serve the meatballs topped with the sauce and garnish with chopped parsley.

Notes:

  • For an extra creamy sauce, you can add a little heavy cream or coconut cream.
  • If you prefer a spicier version, add a pinch of red pepper flakes to the sauce.
  • Serve over zucchini noodles or cauliflower rice to keep it keto-friendly.
