Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/4 cup peach preserves or jam
  • 1 tablespoon finely chopped jalapeño (adjust to taste)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard

Instructions

  • Preheat the oven to 375°F (190°C).
  • Season the chicken breasts with salt and pepper.
  • In a skillet, heat olive oil over medium-high heat.
  • Sear the chicken breasts for 3-4 minutes on each side until golden brown.
  • Transfer the seared chicken to a baking dish.
  • In a small bowl, mix the peach preserves, jalapeño, apple cider vinegar, and Dijon mustard together to make the glaze.
  • Pour the glaze over the chicken breasts.
  • Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

Notes

  • Adjust the level of jalapeño depending on how spicy you like it.
