  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup creamy peanut butter
  • 24 miniature peanut butter cups, unwrapped

Instructions

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
  • Beat in the eggs and vanilla extract until well combined.
  • In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients.
  • Fold in the creamy peanut butter until fully incorporated.
  • Roll the cookie dough into 1-inch balls and place them on the prepared baking sheet.
  • Press a miniature peanut butter cup into the center of each cookie ball.
  • Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For an extra chocolate flavor, drizzle some melted chocolate over the cooled cookies.
  • If you want your cookies a bit chewier, you can add 1/4 cup of milk to the dough.
  • Be sure to let the cookies cool slightly before transferring them to prevent them from breaking.
