These homemade Peanut Butter Cup Cookies are soft and chewy, with a rich peanut butter base and a mini peanut butter cup in the center. A perfect balance of peanut butter and chocolate, these cookies are sure to satisfy any sweet tooth!

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup creamy peanut butter
- 24 miniature peanut butter cups, unwrapped
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
- Beat in the eggs and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients.
- Fold in the creamy peanut butter until fully incorporated.
- Roll the cookie dough into 1-inch balls and place them on the prepared baking sheet.
- Press a miniature peanut butter cup into the center of each cookie ball.
- Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
- For an extra chocolate flavor, drizzle some melted chocolate over the cooled cookies.
- If you want your cookies a bit chewier, you can add 1/4 cup of milk to the dough.
- Be sure to let the cookies cool slightly before transferring them to prevent them from breaking.
