- 1 teaspoon vanilla extract
- 24 mini peanut butter cups, unwrapped
Instructions
- Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the peanut butter, sugar, egg, and vanilla extract until smooth.
- Roll the dough into 24 equal-sized balls and place them on the baking sheet.
- Bake for 10 minutes, then remove from the oven and immediately press a mini peanut butter cup into the center of each cookie.
- Return the cookies to the oven and bake for an additional 2-3 minutes until the peanut butter cups are softened.
- Allow the cookies to cool on the baking sheet before serving.
Notes
- If you prefer a firmer cookie, allow them to cool completely on a wire rack after baking.
- You can substitute the mini peanut butter cups with regular-sized ones, just cut them into smaller pieces.
